Pra quem não viu o prgr." Mais Voce"...
"Biscoitão de Polvilho Recheado c/ Pernil."
Ingredientes:
- 250 ml de leite
- 250 ml de óleo
- 1 kg de polvilho azedo
- 2 ovos
- 1 colher (sopa) de sal (25 g)
- 50 g de farinha de milho misturada com 100 ml de água
- 50 g de queijo meia cura (opcional)
- (+/-) 400 ml de água
Marinado do Pernil:
- 1 pernil de porco (com 6 a 7 kg)
- 350 g de alho (batido no processador)
- 1 litro de vinho branco
- 1 colher (sopa) colorau
- 4 litros de água
Modo de Preparo
1 - Numa panela coloque 250 ml de leite e 250 ml de óleo e leve
para ferver.
2 - Numa tigela coloque 1 kg de polvilho azedo e escalde com a
mistura quente de leite com óleo. Misture um pouco e junte 2
ovos, 1 colher (sopa) de sal (25 g), 50 g de farinha de milho
misturada com 100 ml de água e 50 g de queijo meia cura
(opcional). Amasse bem e adicione aos poucos (+/-) 400 ml de água
até desgrudar das mãos e ficar em ponto de enrolar. Pegue uma
pequena porção de massa e com as mãos untadas, enrole esta massa
em formato de rolinho.
3 - Numa assadeira untada com óleo coloque os rolinhos separados
e leve para assar em forno pré-aquecido a 180 graus por 30 a 40
minutos.
4- Retire os biscoitos assados, corte ao meio e deixe esfriar.
Recheie com carne de pernil de porco assada.
Marinado do Pernil:
1- Num saco plástico grande coloque 1 pernil de porco (com 6 a 7
kg) com 350 g de alho (batido no processador), 1 litro de vinho
branco, 1 colher (sopa) colorau, 4 litros de água e deixe
marinando por +/- 2 horas.
2- Transfira o pernil com os temperos para uma assadeira, enrole
papel alumínio e leve ao forno a 180 graus por +/- 1 hora.
3- Retire o pernil da assadeira. Coe o molho que se formou,
adicione 1 colher (chá) de alho batido, meia xícara (chá) de
vinho branco, misture bem e coloque dentro de um vidro ou frasco
para utilizá-lo na chapa com o pernil fatiado.
